Ingredients:
- 500g Baby Spinach
- 1 punnet Tomatoes
- 1 Broccoli
- 100g Danish Feta Cheese
- 1 Pomegranate
Directions:
1. Wash spinach and broccoli.
2. Place spinach into the salad bowl.
3. Cut the broccoli into smaller florets. Top the spinach with the broccoli.
4. Cut the feta into small 1cm cubes and spread evenly through salad
5. Cut open the pomegranate and break the seeds / buds out and spread over the salad.
Variations:
Spicy Chicken – cut chicken into strips and sprinkle with Moroccan spice. Cook in olive or coconut oil.
