- 1/3 cup dates, finely chopped
- 2 tablespoons chia seeds
- 3 tablespoons boiling water
- 2 scoops chocolate protein powder
- 2 scoops almond meal
- 3 tablespoons natural peanut butter
- 1/2 tablespoon cocoa powder (little more or less, to taste)
Mix the dates with the chia seeds in a small bowl & add 3 tbs boiling water. Stir and set aside for 10-15 mins, until it goes really gluggy.
Then put the date/chia mixture in a food processor, along with the chocolate protein powder, almond meal, natural peanut butter and cocoa powder. Process till blended. The mixture will give the motor of your food-processor a real workout! It will be quite dense and sticky, but becomes less sticky as it cools.
Once blended well, roll small amounts (only about 1/2 tablespoon) into balls, roll in coconut, then chill before serving.
Variation: Add a little peppermint or orange essence to add some extra flavour.
