So many of our favourite not-so-healthy meals can easily be made more healthy by changing a few ingredients, and the way the food is cooked.
Here’s a tasty, healthy and lower-calorie alternate to the ol’ favourite “Chicken Parmigiana”!
Ingredients:
- Chicken Breasts (enough to feed your family)
- Quinoa Flakes*
- Tomato Paste
- Shaved Parmesan Cheese
- 1 – 2 eggs – depending on how many chicken breasts are being used
Directions:
Beat the egg in a shallow bowl.
Put the quinoa flakes on a plate/tray – enough to cover all your chicken breasts.
Cover the chicken breasts in the egg, then roll in the quinoa grains until evenly coated.
Cook over the stove in a pan coated with a light spray of oil, OR bake in the oven.
Once the chicken is almost cooked through, add a generous smear of tomato paste to cover one side of the chicken.
Top with the parmesan cheese and put a lid over the pan, or leave in the oven for a few more minutes until the cheese is melted.
Serve with steamed veggies or a side salad as pictured above.
