Eggs are super adaptable!
Time poor people….. When you’re chopping veg for dinner chop up a little extra and put in to a microwavable container.
A delicious combo:
Mushroom, spring onion, spinach, tomato.
In the morning crack an egg or 2 on top of the veggies mix it around and zap it in the microwave… instant omelette! Top with some salsa or avocado.
If you have a little extra time…..
Poach or dry fry an egg and have it with a good grainy bread, like Rye, or soy & linseed. Spread your toast with avocado and a little relish… Beetroot relish (which is pretty easy to make yourself!) is delicious!! Sprinkle with a little parmesan cheese or dukkah. Serve with greens like spinach or rocket. If time allows saute mushroom, spinach and garlic to have on the side.
Always try to add some veggies, this will fill you up and fill in any nutritional gaps, keeping you satisfied and healthy!!
